Onion Soup

Ingredients
- 6 medium yellow onions (sliced into strips)
- 1/4 cup butter
- 3 tbsp flour
- 3 cups water
- salt and pepper to taste
- (optional) bread crusts or croutons (preferably homemade bread)
- (optional) shredded cheese to taste
Instructions
- Melt butter in frying pan
- Cook onions in frying pan on medium-low heat until caramelized, stirring about every minute
- Once onions are caramelized, add flour to frying pan and mix in frying pan at medium-low heat to make an onion roux
- Put cooked onion roux into a pot and add 2 1/2 cups of water
- Bring water to boil and add salt and pepper to taste
- Let soup boil for about 3-5 minutes, stirring occasionally
- Serve soup in a bowl, optionally adding some bread crusts or croutons and cheese to top of soup
